School’s out, the weather’s fine, and
the fish are biting in June all across the
country.
Lemony Flounder Baked in Foil
We’ve never eaten a flounder dish we
haven’t enjoyed, and this one is especially
delicious.
Ingredients:
1-1/4 pounds flounder fillets
Chive and onion cream cheese
Sliced scallions
4 (10-inch square) sheets of foil
Cooking spray
Lemon slices
Preparation:
Spritz the 4 sheets of foil with cooking
spray, and place a few lemon slices on
each square. Divide up the flounder fillets,
and put on the squares. Spread flounder
with softened chive and onion cream
cheese, and top with sliced scallions. Add
salt and pepper, and roll up the fillets.
Fold foil to enclose fish. Bake at 350
degrees for 10 minutes, or until the fillets
are done. Unwrap, sprinkle with scallion
slices, and serve with rice pilaf and cooked
vegetables. Ample servings for 4 people.
3 Ingredient Rice Pilaf
Ingredients:
1 package Knorr vegetable soup mix (1
ounce package)
3-4 chicken bouillon cubes plus 3 cups
water
1 cup uncooked long grain white rice (not
instant)
Preparation:
Place all ingredients in a small sauce pot,
and stir. Bring just to a boil over medium
